Sharing a link about a new restaurant that is being opened up in Kolkata, at Seabuckthorne, and we were also asked about which item to order for the first try. So, we said dessert because we wanted to try out some of the food on offer at Seabuckthorne, specifically the ice-cream.
A few weeks ago, we had met up with Mr. Saket Naik of the team behind Seabuckthorne and they were already working on preparing for the grand opening. Mr. Naik had introduced us to the concept of Seabuckthorne and told us that it would be an iconic experience that Kolkatans would remember for years to come.
Mr. Naik was kind enough to take time out and share with us his experiences of creating Seabuckthorne as well as the story behind some of the music and design of the place.
On using an Iconic restaurant space as a narrative for this novel restaurant, what is your main objective with opening a place like Seabuckthorne?
In this case, the design of the building and the décor was the main narrative. We wanted the décor to be something that would make people who come in think they were in someplace else. The transition from the outside to the inside was pretty dramatic.
What was the biggest challenge you faced in bringing Seabuckthorne to life?
The biggest challenge was of course the liquor license that we had to get. We have a license for beer and wine and hence we were happy to use that space for the desserts we were serving there. We had to get a license for alcoholic liquor and that was quite a challenge. We were very fortunate to get a deal with the State government. And at that time, we got a favorable decision from the Income Tax Department. We were a young company and so, the I-T department was happy with the track record we had.
About the design for the place, how is it different from other cafes that you have visited?
